Buffalo Butter Banana Bread
Dense, moist banana bread made with buffalo butter instead of oil — an extraordinary everyday bake that will change how you see this classic forever.
Ingredients
| Ripe bananas, mashed | 3 large |
| Sree Kumaran Desi Buffalo Butter, melted | ⅓ cup |
| Jaggery or sugar | ¾ cup |
| Egg | 1 |
| All-purpose flour | 1½ cups |
| Baking soda | 1 tsp |
| Cardamom powder | ½ tsp |
Method
- Preheat oven to 175°C. Grease a loaf tin with buffalo butter.
- Mix mashed banana with melted buffalo butter. Add jaggery and egg and whisk together.
- Fold in flour, baking soda and cardamom until just combined. Do not over-mix.
- Pour into the loaf tin. Bake for 55–60 minutes until a skewer comes out clean.
- Cool in tin for 10 minutes before turning out. Serve warm with an extra smear of cold buffalo butter.
Chef's Note
Buffalo butter produces a denser, moister crumb than regular butter because of its lower water content. The cardamom gives this an unmistakably Indian character. Slice thick and serve with tea.
