Beans Poriyal

The everyday Tamil Nadu vegetable stir-fry — French beans with coconut, tempered in wood pressed coconut oil. Simple, nutritious, fragrant and ready in 15 minutes.

Ingredients

French beans, finely chopped 2 cups
Sree Kumaran Wood Pressed Coconut Oil 1½ tbsp
Mustard, urad dal, dry red chilli, curry leaves 1 tsp each
Fresh coconut, salt 2 tbsp, to taste

Method

  1. Heat coconut oil. Temper mustard, urad dal, red chilli and curry leaves. Add beans with salt. Cover and cook on medium 8 minutes until tender but still bright green.
  2. Add grated coconut, toss and serve with rice and sambar.
