Beans Poriyal
The everyday Tamil Nadu vegetable stir-fry — French beans with coconut, tempered in wood pressed coconut oil. Simple, nutritious, fragrant and ready in 15 minutes.
Ingredients
| French beans, finely chopped | 2 cups |
| Sree Kumaran Wood Pressed Coconut Oil | 1½ tbsp |
| Mustard, urad dal, dry red chilli, curry leaves | 1 tsp each |
| Fresh coconut, salt | 2 tbsp, to taste |
Method
- Heat coconut oil. Temper mustard, urad dal, red chilli and curry leaves. Add beans with salt. Cover and cook on medium 8 minutes until tender but still bright green.
- Add grated coconut, toss and serve with rice and sambar.
