Dry Fruits Kheer
A rich, indulgent milk kheer loaded with premium dry fruits — served at celebrations and festivals across South India. Every spoonful carries a different nut or dried fruit.
Ingredients
| Full fat milk | 1 litre |
| Sugar or jaggery | ½ cup |
| Sree Kumaran Natural Premium Dry Fruits Mix | ½ cup |
| Saffron soaked in warm milk | a generous pinch |
| Cardamom, ghee | ½ tsp, 1 tbsp |
Method
- Bring milk to a boil. Reduce heat and simmer, stirring every 5 minutes, until reduced to ¾ of original volume — about 25 minutes. The milk should be thick and creamy.
- Add sugar, saffron milk and cardamom. Stir until dissolved. Simmer 5 more minutes.
- In a small pan, heat ghee and lightly fry the dry fruits mix for 2 minutes. Add to the kheer. Serve warm or chilled. The kheer will be golden from saffron and studded with premium fruits and nuts.
Chef's Note
Lightly frying the dry fruits in ghee before adding them softens the raisins, crisps the cashews and releases the oils in the almonds — making the texture of each piece perfect in the creamy kheer. Never add dry fruits cold directly into hot kheer.
