Ellu Urundai
Ancient sesame balls bound with jaggery and cardamom — the original Tamil Nadu energy sweet, made for festivals, winters, and new mothers.

Ingredients
| White sesame seeds | 1 cup |
| Jaggery, grated | ½ cup |
| Water | 2 tbsp |
| Cardamom powder | ½ tsp |
| Sree Kumaran Wood Pressed Sesame Oil (for hands) | 1 tsp |
Method
- Dry roast sesame seeds on low heat, stirring constantly, until lightly golden and popping. Transfer immediately to a plate. Cool completely.
- Dissolve jaggery in water over medium heat. Continue cooking until soft ball stage — a drop in cold water forms a soft pliable ball.
- Add roasted sesame and cardamom to the syrup. Stir quickly to combine.
- Rub sesame oil on your palms. While still warm, scoop portions and roll into firm balls between your palms. Work fast before the mixture cools.
- Place on a greased plate. Cool completely before storing in an airtight container. Keeps for one week.
