Varagu Kanji

A gentle, light porridge from kodo millet flakes — easy on digestion, low glycaemic, traditionally eaten by elders and those recovering from illness across Tamil Nadu.

Ingredients

Sree Kumaran Kodo Millet Flakes 1 cup
Water 3 cups
Salt or jaggery to taste
Buttermilk or coconut milk to finish ¼ cup

Method

  1. Boil water, add kodo millet flakes and stir continuously for 8 minutes until thick.
  2. Add salt (savoury) or jaggery (sweet). Finish with a splash of buttermilk or coconut milk. Serve warm.

Kodo millet kanji was traditionally given after fever breaks and after difficult digestion. It is now known scientifically to have exceptional antioxidant properties and the lowest GI of the common millets.
