Millet Pasta Primavera

Ingredients
- Sree Kumaran Multi Millet Pasta200 g
- Olive oil or Sree Kumaran Wood Pressed Groundnut Oil2 tbsp
- Garlic, finely chopped3 cloves
- Bell peppers, thinly sliced (mixed colours)1 cup
- Zucchini or bottle gourd, sliced1 small
- Cherry tomatoes, halved1 cup
- Fresh basil or coriander leaveshandful
- Chilli flakes½ tsp
- Parmesan or grated coconut (optional)2 tbsp
- Salt and pepperto taste
Method
- Bring a large pot of salted water to a rolling boil. Cook the millet pasta according to package timing — usually 7–9 minutes — until al dente. Reserve ½ cup of the starchy cooking water, then drain.
- While the pasta cooks, heat oil in a wide pan on medium heat. Add garlic and cook for 30 seconds until fragrant but not browned.
- Add bell peppers and zucchini. Sauté for 4–5 minutes until just tender but still bright and crisp.
- Add cherry tomatoes and chilli flakes. Cook for 2 more minutes until the tomatoes soften slightly and release their juices.
- Add the drained pasta directly to the pan along with a splash of the reserved cooking water. Toss well to coat every strand in the vegetable juices and oil.
- Season with salt and pepper. Finish with fresh basil or coriander and a scatter of parmesan or coconut. Serve immediately, while hot.

Millet pasta cooks faster than wheat pasta and can turn soft quickly — start checking for doneness a minute or two early. The nutty flavour of millet pairs beautifully with garlic and olive oil, so keep the sauce simple and let the grain speak for itself.
