Coconut Lime Dressing
A tropical-inspired salad dressing with extra virgin coconut oil, lime, ginger and honey — clean, bright and naturally anti-inflammatory. Goes beautifully with any salad or grain bowl.
Ingredients
| Sree Kumaran Extra Virgin Coconut Oil, melted | 2 tbsp |
| Fresh lime juice | 2 tbsp |
| Honey or jaggery syrup | 1 tsp |
| Fresh ginger, grated | ½ tsp |
| Salt, pepper | to taste |
Method
- Whisk all ingredients together until emulsified. Dress salad immediately before serving — the oil will solidify at room temperature in cold weather. Shake or whisk to re-emulsify if needed.
Extra virgin coconut oil has a delicate, clean flavour and a high lauric acid content — one of the most beneficial fatty acids for immune function. Used raw in dressings, none of its nutritional properties are lost to heat. This is the highest-value way to consume coconut oil.
