Coconut Lime Dressing

A tropical-inspired salad dressing with extra virgin coconut oil, lime, ginger and honey — clean, bright and naturally anti-inflammatory. Goes beautifully with any salad or grain bowl.

Ingredients

Sree Kumaran Extra Virgin Coconut Oil, melted 2 tbsp
Fresh lime juice 2 tbsp
Honey or jaggery syrup 1 tsp
Fresh ginger, grated ½ tsp
Salt, pepper to taste

Method

  1. Whisk all ingredients together until emulsified. Dress salad immediately before serving — the oil will solidify at room temperature in cold weather. Shake or whisk to re-emulsify if needed.

Extra virgin coconut oil has a delicate, clean flavour and a high lauric acid content — one of the most beneficial fatty acids for immune function. Used raw in dressings, none of its nutritional properties are lost to heat. This is the highest-value way to consume coconut oil.
