Drumstick Leaves Poriyal
Murungakeerai stir-fried in wood pressed groundnut oil with coconut — one of the most nutritionally dense side dishes in Tamil Nadu cooking, ready in 10 minutes.
Ingredients
| Drumstick leaves (murungakeerai), cleaned | 2 cups packed |
| Sree Kumaran Wood Pressed Groundnut Oil | 2 tbsp |
| Mustard, urad dal, dry red chilli, shallots | 1 tsp each |
| Fresh coconut, salt | 2 tbsp, to taste |
Method
- Heat groundnut oil. Temper mustard and urad dal, add red chilli and shallots. Cook shallots until golden.
- Add drumstick leaves and salt. Stir-fry on medium-high for 5 minutes until wilted and cooked through. Add coconut, toss and serve with rice and sambar.
Murungakeerai has more calcium than milk and more iron than spinach. Cooked in wood pressed groundnut oil, its nutrients are better absorbed — the natural fat in the oil is the delivery vehicle for the fat-soluble vitamins in the leaves. This is traditional nutrition science.
