Verkadalai Chutney
The rich peanut chutney of Tamil Nadu — roasted groundnuts tempered in cold-pressed groundnut oil. The oil and the chutney share the same soul: pure peanut, nothing added.
Ingredients
| Roasted peanuts, skinned | 1 cup |
| Fresh coconut, grated | ¼ cup |
| Green chillies, garlic, ginger, tamarind | to taste |
| Salt, water | as needed |
| Sree Kumaran Wood Pressed Groundnut Oil (for tempering) | 1 tbsp |
Method
- Grind peanuts, coconut, chillies, garlic, ginger, tamarind and salt with water to a smooth, thick chutney.
- Heat groundnut oil. Splutter mustard seeds, urad dal, curry leaves, dry red chilli. Pour over chutney. Serve with idli or dosa.
Wood pressed groundnut oil in the tempering doubles the peanut flavour of this chutney — the cold-pressed oil carries the same roasted nut aroma as the chutney itself. This is the traditional Tamil Nadu hotel-style peanut chutney and it is extraordinary.
