Kattuyanam Idli
Soft steamed heritage rice idlis with a beautiful pink blush — same classic technique, but with the nutritional depth and faint earthiness of ancient Kattuyanam rice.
Ingredients
| Kattuyanam Rice Flakes, soaked 4 hrs | 1 cup |
| Urad dal, soaked 4 hrs | ½ cup |
| Fenugreek seeds, salt | ½ tsp, to taste |
Method
- Grind urad dal and fenugreek to a smooth fluffy batter. Grind flakes to a slightly coarser batter. Combine, add salt, ferment 8–10 hours.
- Steam in greased idli moulds for 12–14 minutes. Unmould and serve with sambar and chutney. The idlis will have a pinkish-red tint — that is genuine Kattuyanam.
Use the soaking water of the flakes in the grind — it carries the natural pigments and adds subtle colour to the batter. Kattuyanam idlis are slightly denser than white rice idlis but just as soft when fresh.
