Kattuyanam Kanji

Ingredients
| Sree Kumaran Kattuyanam Rice Flakes | 1 cup |
| Water or thin coconut milk | 3 cups |
| Salt or jaggery to taste | as needed |
Method
- Boil water. Add flakes and stir continuously for 10 minutes until creamy and thick. Season. Serve warm with buttermilk or coconut milk on the side.
Kattuyanam — meaning wild rice — is one of the oldest cultivated rice varieties of Tamil Nadu. Its red bran contains proanthocyanidins that are traditionally understood to cool the body and strengthen digestion.
