Kattuyanam Payasam

Red heritage rice pudding cooked in milk and finished with jaggery — a warm rose-coloured payasam that carries the nutritional power of ancient Tamil Nadu grain.

Ingredients

Kattuyanam Rice Flakes ½ cup
Milk 3 cups
Jaggery, dissolved and strained ¾ cup
Cardamom, ghee, cashews standard

Method

  1. Cook flakes in milk on medium-low for 20 minutes until dissolved and creamy. Off heat, add strained jaggery and cardamom. Top with ghee-fried cashews.

Always add jaggery off the heat — the milk will curdle otherwise. The payasam turns a beautiful dusty-rose colour from the Kattuyanam bran. Serve in small portions as this payasam is deeply satisfying.
