Kuthiraivali Kanji
Barnyard millet porridge — the fasting food of Tamil Nadu, eaten during Ekadasi and Navratri. Light, rapidly digestible, and naturally high in iron and fibre.
Ingredients
| Sree Kumaran Kuthiraivali Flakes | 1 cup |
| Milk or water | 3 cups |
| Jaggery or salt | to taste |
Method
- Bring liquid to boil. Add flakes, stir continuously on medium for 8–10 minutes until thick and creamy. Add sweetener or salt. Serve warm.
Kuthiraivali is one of the few millets permitted during Hindu fasting days. It digests quickly, keeping the body light during fasting without hunger. Eaten with a drizzle of ghee and a side of curd, it is complete nourishment.
