Kuthiraivali Khichdi
A one-pot healing khichdi of barnyard millet and moong dal with gentle spices — the perfect sick-day meal or detox dish that leaves you nourished without heaviness.
Ingredients
| Kuthiraivali Flakes | 1 cup |
| Yellow moong dal | ½ cup |
| Water | 4½ cups |
| Ghee, cumin, turmeric, ginger, asafoetida | 1 tbsp + 1 tsp each |
| Salt | to taste |
Method
- Heat ghee, temper cumin, ginger, turmeric and asafoetida for 30 seconds. Add flakes and moong dal, stir 2 minutes. Add water and salt.
- Pressure cook 4 whistles. The khichdi should be very soft and flowing. Finish with a spoon of raw ghee. Serve with pickle or curd.
This khichdi is the South Indian equivalent of congee — designed to be easy to eat, easy to digest, and deeply restorative. Kuthiraivali's high fibre content makes it particularly soothing for the digestive system.
