Kuthiraivali Ven Pongal
The lighter, fasting-day pongal — barnyard millet and moong dal cooked soft and tempered with ghee, pepper and cumin. All the comfort of classic pongal, easier on the body.
Ingredients
| Kuthiraivali Flakes | 1 cup |
| Moong dal | ½ cup |
| Water | 4 cups |
| Ghee, pepper, cumin, cashews, ginger, curry leaves, salt | standard |
Method
- Roast moong dal until golden. Pressure cook with flakes and water for 4 whistles. Mash lightly. Temper with ghee, pepper, cumin, ginger, cashews, curry leaves. Pour over pongal and serve hot.
Kuthiraivali cooks to a softer, more homogeneous texture than rice in pongal — almost like a smooth porridge. The generous ghee tempering is what gives it structure and richness. Do not reduce the ghee.
