Thooyamalli Idli

The softest, whitest idlis made with pure white heritage rice — a tradition in Tamil Nadu temples where this variety is the only rice considered appropriate for offering.

Ingredients & Method

Soak 1 cup Thooyamalli Rice Flakes 4 hrs. Soak ½ cup urad dal + ½ tsp fenugreek 4 hrs separately. Grind urad dal to a smooth fluffy batter. Grind flakes to a slightly coarser batter. Combine with salt. Ferment 8–10 hrs. Steam in idli moulds 12–14 minutes. The idlis will be a pure, brilliant white. Serve with sambar and chutney.

Thooyamalli idlis ferment beautifully because the starch in this variety is highly accessible to the bacteria. The result is an exceptionally sour, well-risen batter and idlis that are both light and white as cloud. In Thanjavur, this is the temple idli variety.
