Pori Urundai

Crispy puffed rice balls bound in jaggery syrup — the most iconic Tamil Nadu Karthigai Deepam sweet. Simple, beloved, and impossible to stop eating once started.

Ingredients

Puffed rice (pori), clean 3 cups
Sree Kumaran Organic Jaggery, grated 1 cup
Water ¼ cup
Cardamom, dry ginger, sesame ¼ tsp each

Method

  1. Dissolve jaggery in water over medium heat. Cook without stirring to hard ball stage — a drop in cold water should form a hard ball. Add cardamom, dry ginger, sesame.
  2. Quickly add puffed rice and mix vigorously to coat. Grease palms with ghee and roll into tight balls immediately while hot. Work fast before the syrup hardens.

The hard ball stage is critical — too soft and the urundai will not hold shape; too hard and it becomes impossible to chew. Pure organic jaggery gives these a deep golden colour and a caramel depth that white sugar cannot match.
